Straight off the bat, a nice hit of sweetness from the molasses and brown sugar which gives way to a smooth peppery richness with a tiny amount of spice on the back of the pallet. The seemingly high sweetness helps to caramelise and give a beautiful char/bark, enhancing the natural Maillard crust on a big ole piece of beef.
