• 1 garlic clove, crushed
  • ¼ red onion, thinly sliced
  • 1 fresh red chilli, seeded and chopped
  • ½ tablespoon olive oil
  • extra-large or 10 to 12 medium green prawns, shelled and deveined, tails removed
  • 2 tablespoons pizza sauce
  • Thin pizza base, about 22cm in diameter
  • 30 grams pizza cheese
  • Freshly ground black pepper
  • 1 handful baby rocket leaves
  • Prepare the grill for direct cooking over medium heat (180° to 230°C) and preheat a pizza stone for at least 15 minutes, following manufacturer’s instructions.
  • In a frying pan on the stove top combine the garlic, onion, chilli, and olive oil; fry for 1 minute. Add the prawns and cook until their colour has changed, about 2 minutes, turning once.
  • Evenly spread the pizza sauce over the base and top with the prawn mixture and cheese. Season with pepper. Cook the pizza on the pizza stone over direct medium heat, with the lid closed, until the crust is golden brown and the cheese is melted, 10 to 12 minutes. Remove from the grill and dress with baby rocket leaves.
